Ten people on the Fajita Bar Tier 1 ($16.99/person, one protein choice) with everyone choosing Herb Chicken runs 10 × $16.99 = $169.90 before tax. Split that same group so six pick chicken and four pick Grilled Steak (+$4.50pp), and the math becomes (6 × $16.99) + (4 × $21.49) = $101.94 + $85.96 = $187.90 before tax - a $18 swing for adding a premium protein to less than half the group. Add a small garden salad ($45, serves 8-12) and the full order lands at $232.90 before tax.
Example 2: A 25-Person Department Lunch
Twenty-five people on Brack's Tier 2 ($17.99/person, two protein choices) runs a $449.75 base before tax. Say five of those guests choose salmon as one of their two proteins (+$6pp): add $30, bringing the base to $479.75. Round out the order with a large garden salad ($90, serves 14-18) and beverages by the gallon (two gallons at $10 each = $20), and the full budget comes to $589.75 before tax - roughly $23.60 per person all-in, once sides and drinks are folded into the real total rather than just the headline per-person rate.

Example 3: A 50-Person All-Hands
Fifty people on the Fajita Bar Tier 1, split so forty choose a standard protein and ten choose steak (+$4.50pp), works out to (40 × $16.99) + (10 × $21.49) = $679.60 + $214.90 = $894.50 before tax. Two large garden salads for a group this size ($90 × 2 = $180) and cookies for dessert (50 × $3.00 = $150) bring the full order to $1,224.50 before tax - a useful reminder that desserts and sides at scale can add up to nearly as much as a full protein upcharge line.
Example 4: A Small 8-Person Meeting
Not every catering order is a big one. Eight people on the Fajita Bar Tier 1, all choosing standard proteins, runs 8 × $16.99 = $135.92 before tax - below the per-person minimums some caterers enforce, but not ours. Skip the salad add-on for a group this size and bring your own drinks, and that's the full budget: no hidden per-order minimum fee stacked on top of the per-person price.
Three Ways to Trim a Catering Budget Without Cutting Quality
If a quote comes back over budget, the add-ons are usually the easiest place to cut before touching the protein choice - a salad or dessert line can often be dropped entirely if your office already has snacks on hand. Second, concentrate premium proteins on a smaller subset of the group rather than spreading a partial upgrade across everyone; four people choosing steak costs less than twenty people choosing a slightly-nicer standard protein most caterers don't even offer as a discount. Third, stick to Tier 1 pricing when protein variety isn't actually a priority for your group - the jump to Tier 2 is a real cost increase in exchange for choice, not a quality upgrade on the food itself.
